SHELLED PISTACHIOS

With its particular properties, and delicate yet intense flavour, this nut is available both peeled and unpeeled. After harvesting the nuts are “shaken” to separate the husks from the shells. An initial brief drying process is then followed by shelling to obtain the raw seed. Peeling is performed using water at a high temperature/steam.

ROASTED PISTACHIOS

Starting from the raw fruit, recipes tailored to each customer’s requirements are followed to obtain a roasted product with an unmistakeable aroma and flavour. The roasting can range from light to deeper depending on the use, with repeatability guaranteed over time.

GROUND PISTACHIOS AND FLOUR

Roasted nuts undergo grinding and sieving to obtain flour with a particle size of less than 1.5 mm, or grains sized to order or available in various standard sizes, the most common being 1/3 mm, 2/4 mm, 3/5 mm, 8/12 mm.

PISTACHIO PASTE

Grinding and refining produce 100% pistachio paste, which is then sieved to obtain excellent fluidity and uniformity while preserving the fruit’s unmistakeable notes and typical green colour. Its delicate, characteristic flavour bears testimony to the high quality of the raw material used. Also available on request: peeled raw pistachio paste and praline paste.
