SHELLED HAZELNUTS

A careful quality selection process carried out both mechanically and manually follows shelling to eliminate any foreign bodies and visible defects and give our nuts their unique tasting properties.

ROASTED HAZELNUTS

Starting from the raw fruit, following recipes tailored to the customer’s requirements we obtain a roasted product with an intense aroma and characteristic notes. The roasting can range from light to deeper depending on the use, with repeatability guaranteed over time.

GROUND HAZELNUTS AND FLOUR

Roasted nuts undergo grinding and sieving to obtain flour with a particle size of less than 1.5 mm, or grains sized to order or available in various standard sizes, the most common being 1/3 mm, 2/4 mm, 3/5 mm, 8/12 mm.

HAZELNUT PASTE

Grinding and refining produce 100% hazelnut paste, which is then screened to obtain excellent fluidity and uniformity. Also available: gianduja paste (hazelnut paste with the addition of sugar and cocoa) and praline paste (pure 100% paste with the addition of granulated sugar).

We have 2 collection centers in Piedmont: the historic shelling plant in Cortemilia and the innovative collection point in Pocapaglia, where we carry out the storage, cleaning and drying of the shell product delivered directly by the producers. We therefore can assure the traceability of the Piedmontese product for each single producer, step by step.
Nocciola Piemonte PGI identifies the Tonda Gentile Trilobata hazelnut cultivar which is produced in Piedmont and mainly in the area of the Langhe, Roero and Monferrato hills.
From 2020 we can offer the local branded hazelnuts “Nocciole Piemonte PGI Langhe” exclusively grown in Langhe hills
